Ethyl vanillin β-D-glucopyranoside
It is a synthetic phenolic glycoside formed by β-O-glycosidic linkage between ethyl vanillin and D-glucopyranose. The product appears as white to off-white crystalline powder, nearly odorless at room temperature. As a latent aroma precursor, it remains stable under normal storage and processing conditions. Upon thermal treatment or enzymatic hydrolysis, the glycosidic bond breaks and gradually releases ethyl vanillin, delivering long-lasting creamy vanilla flavour.
Compared with free ethyl vanillin, this glycoside features outstanding thermal stability, low volatility and controlled flavour release. It is widely applied in food flavourings, tobacco formulations, cosmetics & personal care products.
